As we approach the holiday season I always get nostalgic for my Grandmother’s recipes. This particular cheese ball recipe my Grandma Betty made for Thanksgiving and Christmas every year. The holiday’s just don’t feel right without it.
While there is no reason to only serve this during the holiday’s, I always crave it this time of year. Whenever I make this I am reminded of wonderful memories with my family, my amazing Grandma, her great food, and the feeling of love.
- 1 pkg of cheese from a box of macaroni and cheese
- 2 pkgs 8 oz cream cheese, softened
- 1/2 cup butter (1 square)
- 1 tsp onion powder
- 2 Tbsp dried chives
- 1/2-1 cup chopped walnuts or pecans
With an electric mixer or in a large bowl with beaters, mix the cream cheese and butter until soft. Add the cheese packet, onion powder, and dried chives.
Divide the cheese mixture in two. Form each half of the cheese mixture into the shape of a ball with plastic wrap. Refrigerate for 30 minutes.
Meanwhile, finely chop the nuts. Remove the cheese balls from the refrigerator and roll each one to coat with nuts.
Wrap with plastic wrap and refrigerator for at least an hour, or freeze.
Serve with your favorite crackers.
This is a great make ahead recipe. It actually tastes better the day after you make it. This recipe also freezes really well. I’ve left one in the freezer for over a month and didn’t notice any difference in taste. Just defrost the cheese ball in the refrigerator overnight before you want to use it.
This recipe is also easy to cut in half. 1/2 of the cheese packet is a heaping 2 Tbsp.
