I thought it would be fun to have our featured guests share a favorite recipe with us! Yesterday, Taylor Halversen was featured on Evolve’s first podcast episode of Real Life, Real Passion. She shared this fabulous recipe for Cowboy Caviar!

I had never heard of cowboy caviar before but I was intrigued. Cowboy and Caviar seem like two complete opposites. Cowboy brings to mind images of rustic and simple food and Caviar rich and elegant cuisine. So, I searched to find out more about the dish. I found this article in the Dallas News that gave a bit more history to the origins of the dish.

Texas Caviar

Cowboy Caviar, also known as Texas Caviar is a marinated black-eyed pea salad/salsa. Helen Corbitt, a famous food consultant and cookbook author from the 1950’s is attributed with the creation of the dish. She was from New York, and after arriving in Texas learned that Texans, even wealthy Texans, had a love for the humble black-eyed pea.

She created something new. She pickled the peas in a vinaigrette and served the dish for New Year’s Eve at the Houston Country Club. However, it wasn’t until later when she served her pickled black-eyed peas to Austin’s Driskill Hotel a year later that the dish received its nickname of “Texas Caviar”.

There are many variations to the recipe, but this one looks amazing. Thank you Taylor for sharing!

Cowboy Caviar
Ingredients
  • 2 cans of diced tomatoes with jalapenos drained
  • 1 can pinto beans rinsed and drained
  • 1 can black beans rinsed and drained
  • 1 can black eyed peas rinsed and drained
  • 1 can corn drained
  • ½ bunch green onions chopped
  • ½ bunch cilantro chopped
  • 2 avocados chopped
  • 1/8 cup sugar
  • 1/8 cup lime juice
  • 1 packet of dry Italian Dressing made as directed on package
Instructions
  1. Mix all ingredients together and chill, then, ENJOY!

    Serve with Tortilla Chips.

 

Whether it’s New Year’s or Independence Day, or really any day in between grab a bag of chips and enjoy this fun easy Cowboy Caviar.
