Yesterday on the Real Life, Real Passion podcast, I introduced you to one of my good friends Kerry Peck.

Kerry’s family loves caramels especially around the holidays. She first shared this recipe with me a few years ago around Thanksgiving. We ate them right out of the pan; and even had a friend show us how to dip them beautifully in chocolate.

If you love caramels but not all the work, try this recipe. It’s super easy and delicious.

Homemade Caramels

Kerry’s mother and my grandmother have something in common. They both enjoy making homemade candy.

Kerry remembers growing up watching her mother make beautiful and amazing homemade candies. She loved the taste of the treats, but she also saw all the hard work her mother put in to get the results. She looked for away to get the great homemade taste without all the work.

She found this recipe and it has been a hit ever since. Her family loves it.

Mine does too. An entire 9×13 pan disappeared in two days! And I only have three people at my house. I’m not going to acknowledge how many I may have eaten…

Quick and Easy Microwave Caramels

Ingredients
  • 1/2 lb butter 2 sticks
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup light Karo syrup
  • 14 oz can of sweetened condensed milk
  • 1/2 tsp vanilla extract optional
Instructions
  1. Melt the butter in a 2 quart glass bowl (microwave safe with a handle). Add the brown sugar, granulated sugar, Karo syrup, and sweetened condensed milk. Stir well incorporating all ingredients and until it reaches a smooth consistency. 

  2. Place the glass bowl on a large plate, place in the microwave and cook for 7 minutes on high power. Meanwhile, butter a 9x13" pan.

  3. Carefully remove the caramel from the microwave and stir well. Return to the microwave and cook for another 7 minutes on high. It may boil over, which is why you use the plate underneath.

  4. When done, carefully remove from the microwave. Add the vanilla extract if desired, and stir.

  5. Pour the caramel into the prepared pan and let cool.

  6. After 2 or more hours, cut the caramels with a sharp knife to your desired size. Wrap the caramels in wax paper.
